História da alimentação é um campo interdisciplinar que examina a história e os impactos culturais, econômicos, ambientais e sociológicos da alimentação e da nutrição humana. Inclui fomes e desnutrição. Distingue-se do campo mais tradicional da história culinária, que se concentra na origem e na recriação de receitas específicas.
Antropólogos e historiadores
Desde o século XIX, os antropólogos têm sido pioneiros no estudo do papel da alimentação nas sociedades tradicionais através da observação direta e da reconstrução do comportamento a partir de artefatos recuperados em sítios históricos. O tema permanece central na pesquisa antropológica e arqueológica atual, como exemplificado por Kwang-chih Chang na Universidade de Harvard.[1][2] O estudo sistemático da cultura alimentar por historiadores profissionais é um desenvolvimento mais recente, inspirado em grande parte pela francesa Escola dos Annales, exemplificada por Fernand Braudel.[3] No entanto, sempre existiram inúmeros relatos históricos populares, como exemplificado por Waverley Root.[4] O primeiro periódico na área, Petits Propos Culinaires, foi lançado em 1979 e a primeira conferência sobre o assunto foi o Simpósio de Alimentos de Oxford de 1981.[5]
Política alimentar
Historiadores e cientistas políticos exploraram muitos aspectos políticos nacionais e internacionais da história da alimentação.[6][7] Por exemplo, analisaram o papel da comida como ferramenta colonial na África e na Ásia;[8] a “McDonaldização”;[9] as dimensões alimentares das diásporas mexicana, chinesa e italiana;[10] a dimensão de classe em termos das refeições servidas em cafés das classes alta, média e trabalhadora; a Revolução Verde que evitou a fome no Terceiro Mundo;[11] e intensos debates sobre alimentos geneticamente modificados e esforços para impedir sua importação.[12]
